Ulquiorra pretty much didn't change at all. In case of Orihime, you can still tell it's supposed to be her, because of her facial expression.
I think you described the relationship well, but with this genderbend I think Ulquihime is even more doomed than in kanon... female Orihime at least is cute in her way, but I imagine male Orihime would be a wimp.
